How to recompile a package?

Ok, so I need to recompile ffmpeg with --enable-libfdk-aac How can I do that? You don't seem to have the abs package in the repo's.

As long as it is just for a single PKBUILD you can just copy it here:
https://projects.archlinux.org/svntogit/packages.git/plain/trunk/PKGBUILD?h=packages/ffmpeg
Otherwise Manjaro has buildtree which is part of manjaro-tools-pkg... :)
