where are the toolbar icons for pm-applet, nm-applet, cbatticon, etc?

Try a file search tool to find them! nm-applet seems to be defined by the selected icon theme, pamac-tray is probably in hicolor icon theme. You can also open Pamac, select pamac package and look in the tab "Files".

/usr/bin/nm-applet is owned by network-manager-applet 1.0.10-1
and then

]$ pacman -Ql network-manager-applet | grep "icons"gives you a long list ;)

Different for:

$ pacman -Ql pa-applet | grep "icons"
$
This one doesn't bring it's own icons but must be calling for standard icons provided be the current icon theme - or if there isn't one, then the 'inherited' theme will be used - in most cases that's as eugen-b says hicolor.

Also: If the current icon-theme provides an icon then hicolor will be ignored.

By the way, it would be great to have also some bigger sized pamac-tray icons

Well, since we are packaging pamac ourselves that wouldn't be a problem at all. Just, someone has to provide the icons ;)
